I am something of a pancake connoisseur. My specialty is the passover favorite Matzoh Meal Pancakes. (And I make mean chocolate chip pancakes, and pretty good crepes with bananas and strawberries.) I honed my pancake making ability by eating a lot of pancakes for dinner while in college.
Nowadays, I always want pancakes for breakfast, but opt for the extra sleeping time instead.
